wasabi slaw (no mayo)

This cole slaw is a great addition to any family gathering and goes great with pulled pork sandwiches! 

1 head green cabbage
1/2 head purple cabbage
2 carrots
1 1/2 cups Veganaise (or plain yogurt)
1/8 Cup Kalua Gold
3 Tbsp stoneground mustard
2 tsp celery seed
2 Tbsp wasabi
Salt to taste

Thinly slice the cabbage,  shred the carrots, and place in a large bowl.  Mix in all other ingredients, and refrigerate one hour prior to serving.  This slaw is great as a stand-alone side dish, and also enhances any BBQ'd sandwich!

Kalua pork sliders

This recipe is going to have your friends begging you to share your secret.  It is a very simple (yet time consuming) process to get your pork to the perfect consistency.  I used this recipe for a an event with 15 people, and the serving tray was spotless at the end!

1 Pork butt (5 lbs)
2 Cups vegetable broth
Uncle D's seasoning
2 yellow onions, chopped
6 cloves garlic, chopped
1 bottle Kalua Gold sauce
24 pretzel rolls

Preheat oven to 350°.  Coat pork with dry rub and place it fat side up in a tray that is at least 2" deep. Add broth, onions, and garlic around the outside.  Cover and cook for 4 hours, or until internal temperature reaches 180°.  Carefully remove from oven as there is a lot of hot liquid in the pan now.  Place cooked pork on a cutting board and use two forks to pull the meat apart, placing the shredded meat in a large bowl.  It should easily fall apart.  Strain out the onion and garlic from the liquid, and add to the pork.  Reserve 1/2 cup of liquid to add to the pork (I recommend spooning the fat off the top).  Pour in 2/3 bottle of Uncle D's sauce and mix thoroughly.  Save the remaining 1/3 for those who want theirs served "wet".
