Who says that BBQ sauce should be reserved for afternoon or evening meals? This amazing sandwich will definitely change your mind. One of the trademarks of a good sandwich begins with good bread. I definitely recommend a ciabatta or sourdough from your local bakery. This recipe will make two open faced sandwiches.
2 slices sourdough or 1 ciabatta roll sliced in half
2 free range eggs
1 medium-sized onion, sliced
1 ripe avocado
1/4 cup Uncle D's BBQ Sauce
Soft cheese (Boursin, cream cheese, or feta)
Begin by taking medium-sized yellow onion and slicing it thinly. Heat up a small amount of your favorite high heat oil into a pan and sauté (I prefer coconut oil). Do not blacken the onion, as it will not allow the sauce to fully penetrate. Once they sweat and begin to soften, coat them with Uncle D's Organic BBQ sauce and cover with a lid. While this is simmering, cut your avocado in half, and make 1/4" slices to spoon out. Place your bread in a toaster or toaster oven, and fry your eggs while it is toasting. Once the toast is ready, spread a soft cheese (I like Boursin) and get ready to build your sandwich. Place your egg, avocado, and BBQ'd onions on top and enjoy! Any leftover onions can be mixed in with the cheese and added to crackers for a great afternoon snack.
